Office Lunch Series Day #5 | Chicken Caesar Wrap
A fresh take on a classic favourite - my Healthy Chicken Caesar Wrap with a lighter Caesar dressing and crunchy homemade sourdough croutons. Perfect for a quick, delicious lunch!
It’s Day 5 of my 7 Days of Healthy Office Lunches and this one is a winner! If you’re craving a lunch that’s fresh, satisfying, and packed with flavour without the heaviness of a traditional Caesar - this Healthy Chicken Caesar Wrap is your new go-to. With a lighter, homemade dressing and crunchy homemade sourdough croutons, it’s quick to prep, easy to pack, and perfect for keeping you fuelled throughout the day.




Ingredients (Serves 2)
2 wholemeal wraps
200g grilled chicken breast, sliced
1-2 cups cos or romaine lettuce, chopped
4 tbsp grated Parmesan cheese
1-2 pieces of sourdough bread to make homemade croutons
Caesar Dressing:
2 tbsp Greek yoghurt
2 tsp Dijon mustard
1 anchovy fillet
2 small garlic cloves
1 tbsp lemon juice
1 tbsp extra virgin olive oil
Salt & pepper, to taste
Method:
Place the ‘Caesar Dressing’ ingredients into a blender or small food processor and blend until smooth and creamy.
Cut your sourdough into small cubes, toss it in a little olive oil, then spread the pieces on a baking tray and bake at 180°C (350°F) for 10–15 minutes until golden and crispy.
In a bowl, toss the chopped lettuce, chicken, parmesan and croutons with your homemade dressing until everything is well coated.
Spoon the salad mixture onto your wraps, then fold it tightly and slice in half. Wrap in foil or place in a container — ready for a tasty, grab-and-go lunch.
Note: If you want to prep this wrap further in advance, simply double the recipe and keep the dressing separate, then toss the salad with it just before eating. This helps keep the lettuce crisp and the wrap fresh for longer.
